Laurence's Latkes

It seems there are a million variations on the humble latke, from the outlandish to the old school. The one thing that everyone seems to agree on: you can’t celebrate Hanukkah without them (that and that their grandmother’s latkes were the best around…).

Not long ago, I was completely unschooled in the world of these tasty potato pancakes. I did not grow up with a Jewish grandmother, and was without a point of reference...but my husband grew up eating his latkes every December, and I wanted to try to bring a bit of that tradition home for my kids. What’s a bubbe-less girl to do? Enter Laurence Kretchmer, Bobby’s business partner, latke-maker extraordinaire, and my new guide through the land of Jewish cooking.

Under his tutelage, I learned how to make beautiful, free form, crispy edged potato pancakes with a flavorful, creamy interior, better than the crispiest grandma-made latkes of my dreams. Laurence’s latkes aren’t just revelatory in their flavor -- they’re flour-free, too!
