It seems there are a million variations on the humble latke, from the outlandish to the old school. The one thing that everyone seems to agree on: you can’t celebrate Hanukkah without them (that and that their grandmother’s latkes were the best around…).
Not long ago, I was completely unschooled in the world of these tasty potato pancakes. I did not grow up with a Jewish grandmother, and was without a point of reference...but my husband grew up eating his latkes every December, and I wanted to try to bring a bit of that tradition home for my kids. What’s a bubbe-less girl to do? Enter Laurence Kretchmer, Bobby’s business partner, latke-maker extraordinaire, and my new guide through the land of Jewish cooking.
