According to a Southern tradition dating back hundreds of years, starting the New Year with black eyed peas brings good luck. Keeping that tasty ritual in mind, I think I have the perfect New Year’s Day brunch dish -- or any day comfort food brunch dish. (Yes, I know that is quite some statement but I really do believe I know what I am talking about!)
While some prefer to go out (and let others do the work) on what is often a bleary-eyed morning, I think there's no better way to kick off a new year than by sharing brunch with some of your very favorite people... especially if the task at hand is not uber challenging. So serve some strong coffee, pour some champagne to toast to good fortune, and make the very special (and simple, which is key) Creamy Polenta with Braised Greens, Black Eyed Peas, Poached Eggs and Chile Oil.
Sounds and looks impressive, right? It's actually as easy as can be. With just a little prep the day before, this dish comes together in about 30 minutes the day of, yet looks (and tastes) like a LOT more time went into it. So.... even if late-night partying leads to morning fuzziness, the recipe is still a breeze to whip together. Creamy polenta has the comfort food factor covered, and the collards/beans combo has healthy written all over it. As for the poached egg, who doesn’t love a runny yolk? It's delicious and auspicious, all in a single bowl. You want to start the year off right, after all...
