Since GATO opened, almost two months ago, I've noticed one entree showing up on more tickets than the rest. To be honest, I was a bit surprised that this entree, in particular, was the restaurant's best-seller... mainly because it's 100% vegetarian.
That's right, GATO's Kale and Wild Mushroom Paella is our best-selling entree so far. I've spent every single night cooking on the line since we opened, and have made hundreds of paellas. I find it interesting and very exciting to recognize our city's love for vegetables reflected in the feedback from those that visit my brand new restaurant. It's a sign of the times. People are leaning more towards balanced, healthy eating than ever before, and I find that refreshing.
