Pork chops with applesauce may be a classic American combo, but when I think of porky comfort food I immediately think pork chops with green beans and potatoes. The dish has been in my family for close to a century: my grandmother brought the recipe with her from Calabria at the turn of the last century and made it for my mother when she was a child. My mother, in turn, made it for me and my brother when we were growing up.
My mother is Italian and an amazing cook, and there were very few meals that she prepared that I didn’t love... but her dish of simply seared pork chops with potatoes and green beans is without a doubt my all-time favorite. (Her spaghetti and meatballs is a close second!)
I went away to college at age 18 and never really lived full-time at home again. But throughout the years, whenever I came home, I was always certain of two things: that my parents would be thrilled to see me, and there would be a big platter of my favorite dinner on the table when I arrived!
The next time I visit, I'll make my version of this dish for my mom...I think she will approve!
