Think beyond steak and chicken the next time you fire up the barbecue and try grilling fish! It's easy as can be, if you follow a few simple rules. Watch this video and learn.
Start with a firmer (steak-like) fish such as tuna or swordfish and then work your way up to a flakier variety, such as mahi mahi or red snapper. Always brush both sides with oil and make sure your grill is very hot!
Whatever fish you choose to cook, serve it simply with either a quick relish (tomatoes, basil, shallot and olive oil never fails!) or simply a squeeze of lemon juice and some fresh herbs on top.
