Crisps, Cobbler, Buckles and Bettys! Do you know the difference between these delicious fruit desserts?
The most important thing to know is that they're all as easy to make as they are satisfying to eat -- and the combinations are almost endless! I've read that crisps, cobblers, buckles and Bettys are descended from puddings on one side (puddings being to the European word for cake) and pies on the other. They can be based on biscuit dough, pie dough, dumplings, bread crumbs, a crumbled flour-based topping or a cake-like batter, and the fruit may be cooked under, over, inside the dough or between dough layers.
All can be made and on your table in about an hour, and they make the perfect dessert for the holidays (or anytime an unexpected guest stops by your home)! They’re wonderful served warm or at room temperature, and are a perfect way to use up ripe seasonal fruit -- but you can use frozen or canned fruit, too.
So sit back and be prepared to learn a few things about these delicious (and easy) desserts…and then get in the kitchen and make one!
Crisp: Similar to a cobbler, a crisp is a deep-dish fruit dessert that's topped with a streusel-like topping made of butter, sugar and flour (if nuts or oats are added, it becomes a crumble). Cobbler: This deep-dish dessert casserole is made of a sweetened fruit that forms thick syrup when cooked. A cobbler can be topped with biscuit or dumpling dough which will puff up when baked and take on the appearance of cobblestone…thus the name cobbler. The most common cobbler is the peach cobbler. Buckle: A buckle is essentially a fruit-studded coffee cake. The fruit is placed on top of the cake-like batter and sinks during the baking process; this causes the cake to buckle inwards, hence the name! It’s topped with a streusel-like topping. Brown Betty: A Brown Betty is similar to a crisp, but the topping is made with buttery breadcrumbs. Typically made with apples, this thrifty dessert made with leftover stale bread turned into crumbs is the simplest of all to prepare -- and it tastes like apple pie, without all the work!
