Immunity Boosting Smoothie

Serves 2

½ cup - 1½ cups filtered cold water
2 loosely packed cups chopped kale
¼ cup chopped cilantro (stems and leaves)
1 large Honeycrisp apple, core removed, cut into chunks
3 tablespoons chopped fresh ginger
¼ small beet, cut into chunks
1 medium frozen banana, cut in half
1 ripe Fuyu persimmon, cut into chunks
Juice of 1 large lemon

Add water into the carafe of the blender. While the blender is in the off position, add the kale and the cilantro, followed by the apple, ginger and beet. Put the banana and persimmon on top and finish with the lemon juice. Put the blender lid securely in place, and puree the ingredients until completely smooth. Add more water as necessary to reach desired consistency.
