Watermelon Agua Fresca

1 small watermelon, peeled, seeded and diced
Juice of 2 fresh limes
1/4 cup simple syrup*
2 cups cold water

1. Put the watermelon in a blender, in batches, if needed and blend until smooth. Pour the mixture through a strainer set over a bowl.

2.Transfer the watermelon juice to a pitcher, add the lime juice, simple syrup and water and stir to combine. Cover and refrigerate until cold, at least 30 minutes and up to 24 hours. Serve in tall glasses over ice.

*Simple Syrup - Combine 1 cup of sugar and 1 cup of water in a small saucepan and bring to a boil over high heat. Cook until the sugar is completely melted. Remove from the heat and let cool to room temperature; refrigerate until cold. The syrup will keep in the refrigerator tightly covered for up to 1 month.
