Crushed Avocado with Tomatillo

Serves: 4 to 6

4 ripe Hass avocados, peeled, pitted and diced
2 medium tomatillos, husks removed, rinsed well, and diced
Juice of 2 fresh limes
1 small red onion, finely diced
1 or 2 jalapeños (depending on how spicy you like it), halved, seeded and finely diced
¼ teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 green onions (green and pale green part), thinly sliced
¼ cup chopped fresh cilantro leaves

Combine the avocado, tomatillos, lime juice, onion, jalapeno, cumin, salt and pepper in a large bowl and gently mix to combine. Fold in the green onions and cilantro. Serve with baked tortilla chips.
