There are high quality pickles everywhere there days but I love making my own. One of the great things about making pickles at home is that you can tailor them to suit your tastes, making them sweet or sour, and adding as much or as little flavoring as you want. I like my pickles very sour with lots of dill..but, if you don't adjust the recipe to suit your tastes.
My base recipe always starts with crisp Kirby cucumbers, white wine vinegar, distilled vinegar, fresh dill, sugar and kosher salt and then I let my imagination run wild. The sky is the limit when it comes to adding flavor: coriander seeds, cumin seeds, garlic, chiles, fennel seed, black peppercorns mustard seeds. Experiment until you find your favorite combination!
