Mesa Grill's Tomato Tortilla Soup
Many years ago, I was a line cook at Mesa Grill, Bobby’s first restaurant in NYC. In the summer, as part of my daily mise en place, I would make big batches of this soup.
So few ingredients, so simple to make, it was surprising how outrageously delicious it was. Many years later, it is part of my personal repertoire in the summer, when overripe tomatoes are abundant.
