Pimm’s Cup for Spring!

If you listen to my podcast, Always Hungry, then you already know: This Spring, I’m bringing back the Pimm’s Cup at my house! In honor of National Cocktail Day, I’m sharing the recipe.

Pimm’s No. 1 is a liqueur, originally from England, that’s been around for a long time (since 1823). The refreshing Pimm’s Cup cocktail is a classic that’s famously enjoyed at the Wimbledon Tennis Tournament each year. For me, this fresh, fruity, effervescent cocktail brings to mind horse racing and relaxing days out in the sun. Here’s a simple recipe for the classic Pimm’s Cup that we used to serve at my restaurant, Bar Americain. Feel free to personalize it by adding some more of your favorite fruit.

Pimm’s Cup

Serves: 1

1 ½ ounces Pimm’s No. 1

3 ounces cold lemonade

2 ounces cold club soda

Cucumber spear for garnish

Apple slice for garnish

Combine the Pimm’s, lemonade and club soda in highball glass and garnish with the cucumber and apple.
